There’s a seashell-like minerality to the scent of this wine, and a cool, dark cavern feel to its flavors. It’s tight and dry, with fleshy lemon citrus notes firming up the finish. This is 100 percent pinot noir, selected and blended from three vintages. Serve it with poached salmon for brunch.  (90 pts.)

Laurent’s NV Brut Blanc de Noirs wraps around the palate with rich, resonant fruit, honey, almonds, dried flowers and spices. Hints of ash, smoke and licorice develop in the glass, adding further complexity. Based on the wine’s complexity, I would not be surprised if there is a fair amount of reserve wine in this release. Disgorgement date: June 2012. Anticipated maturity: 2012–2016.  (90 pts.)
